Mashbill: 95% rye / 5% malted barley
Nose: Peppercorn and dried herbs, baked rye bread, toasted grain, faint citrus peel
Palate: Rye spice, cracked black pepper, toasted oak, dark honey, hint of vanilla
Finish: Dry, long, and deliberate
Serve: Neat. Straight. The way it was meant.

Honey Rye Whiskey · Small Batch

Wild honey layered over a rye that still knows how to bite.

Mashbill: 70% corn / 25% rye / 5% malted barley + wildflower honey
Nose: Bright wildflower honey, rye spice, cracked pepper, oak
Palate: Honey first, then peppery rye, toasted grain, dried apricot, baking spice
Finish: Long and layered, honey lingering beside firm rye spice
Serve: Neat, slightly chilled, or over a single rock

Apple Rye Whiskey · Small Batch

Crisp orchard fruit and dry spice, from the trees that grew beside the sawmills.

Mashbill: 70% corn / 25% rye / 5% malted barley, applewood finished
Nose: Crisp natural apple, dry rye spice, toasted oak, faint floral note
Palate: Clean apple, sharp rye, warm baking spice, a whisper of cinnamon
Finish: Dry and moderately long, apple softening as spice and oak carry through
Serve: Neat or with a splash of cold water
